This healthy and nutritious recipe will help you squash your eating goals.
Ingredients
Butternut Squash
1 butternut squash
1 tbsp soyabean oil (for basting)
Quinoa Filling
1/4 cup organic quinoa
5 big spinach leaves
1/2 cup chic peas (canned)
2 garlic cloves
1/2 small onion
4 sprigs of thyme
3 tsp complete seasoning
1.5 tsp paprika
Salt & pepper to taste
2 tbsp dried cranberries
3/4 cups water for cooking
Preparation
Pre-heat the oven to 150 - 189° C.
Wash and cut squash in half then, remove belly of squash with a spoon.
Base both the sheet pan and squash with oil. Place basted squash on the pan. Let squash cook for 25-30 mins or until it can be poked with a fork.
While the squash is baking, put quinoa in a pot with water, salt and pepper. Let it cook for 20-25 minutes. After cooking, let quinoa cool and fluff for 5 minutes.
While the quinoa is cooking, chop spinach, onion and garlic and remove thyme leaves from the stem.
Stir fry chopped items, chic peas, complete seasoning and paprika in a pan.
Add fluffed quinoa and the dried cranberries to stir fried mixture and mix well.
Turn off quinoa and check squash.
Once the squash is cooked, remove from oven and stuff with the stir-fried quinoa.
